M-17 Agar is a superior culture medium compared to other formulations for cultivating fastidious lactic streptococci, including Streptococcus cremoris, Streptococcus diacetilactis, and Streptococcus lactis. It is particularly suitable for the cultivation and maintenance of starter cultures used in cheese and yogurt production. Additionally, this medium facilitates the detection of lactose non-fermenting streptococcal mutants.

Preparation |
Suspend 57.25 g of the medium in 1 liter of distilled water and allow it to hydrate. Heat to boiling, distribute into appropriate containers, and sterilize by autoclaving at 121 °C for 15 minutes. |
